What's the best way to clip a Geological model using a mesh?

I am working on a geological model and we need to show the geology at different excavation phases. I was wondering if there's a workflow to slice the Geological Model(s) using the Excavation level Meshes.

    step 1 -   Making Excavation Level Mesh (open surface mesh or closed solid mesh)
    Step 2 -   ProjectTree>meshes>mesh operator>
                            clip mesh or clip volume  
                        to clip your geological model with mesh
